What Are Scones

Scones in America are different than scones in England. Here in America, scones are crumbly baked treats that are made with either sweet or savory ingredients.

They resemble crumbly biscuits, but the batter is mixed with things like blueberries, bacon, or cheese. Sweet scones are sometimes topped with vanilla glaze.

Traditionally, scones are made with all-purpose flour and sugar. In order to make keto-friendly scones, you have to use low-carb ingredients in their place.

To keep the carb count low, I used almond flour instead of all-purpose flour. I don’t recommend trying to use coconut flour instead of almond flour, because it will throw off the texture.

Coconut and almond flour absorb liquid in baked goods differently, so you would have to adjust how much pumpkin puree you use.

The pumpkin puree is the other ingredient you will have to be careful with, especially when you bake a low-carb scone. Don’t accidentally use pumpkin pie filling. It is sweetened with sugar.

I also created a sugar-free glaze with two simple ingredients. Swerve confectioner’s sugar substitute and heavy whipping cream combine to create the ultimate glaze. You can also use this glaze on things like keto donuts or cookies.

Every bite of the scones is like a breath of fall! The spicy cinnamon flavors and sweet pumpkin combine to give you scones with the perfect crumbly texture.

Even though there are just three grams net carbs in each scone, you can’t tell they are low-carb. They don’t have any funky aftertaste. They really do taste like delicious pumpkin spice scones that you could get at a coffee shop.

As they bake, they will make your entire kitchen smell like a fall candle.

How To Store Scones

Scones are the perfect type of pastry to make once and eat all week. Store them in an airtight container or bag and keep them at room temperature for up to a week.

You can also freeze the scones, too! Wrap each one individually in plastic wrap or foil and then put them all in a freezer-safe bag. They will stay fresh for up to six months.

What To Eat With Scones

Keto pumpkin spice scones taste delicious for breakfast, a quick snack, or as an addition to your low-carb lunch.

If you want to eat something light with it for breakfast, make some Keto Ricotta Pancakes. They are so tasty that you don’t even need syrup.

If you’re craving something sweet, make someketo crispy cinnamon cream cheese roll ups. They taste like churro cheesecake and make breakfast or brunch a lot of fun.

I also like to make aketo baked avocado egg with the pumpkin spice scones. It’s high-fat and extra filling. Then, sip on a keto brown sugar shaken espressoand you have the perfect meal.
